Peach Cobbler


note: if I use frozen peaches that we froze ourselves, I skip the peach baking step and since they are sweetened, I also don't add the sugar to the peaches. If using fresh peaches, to peel them easily dip them in boiling water for about 1 minute, then put them in a bowl of ice water. The skins will peel right off. Then slice them into the baking dish.

Ingredients:
about 6 peaches, peeled and sliced (if you like lots of peaches in your cobbler feel free to use more)
2 tbs lemon juice
1/4 cup sugar
1-1/3 cup flour
3 tbs sugar
1-1/2 tsp baking powder
1/2 tsp baking soda
1/4 cup butter
2/3 cup buttermilk
2 tbs sugar mixed with 1/8 tsp nutmeg and 1/2 tsp cinnamon

Heat oven to 400°. Place peaches in a 2 qt baking dish. Add lemon juice and 1/4 cup sugar and stir to coat. Cover with foil and put in the oven for about 15 minutes. If you use canned or frozen (thawed) peaches you can skip this step. But drain the peaches first.

Mix flour, 3 tbs sugar, baking powder. and baking soda in a medium bowl. Cut in butter until mixture resembles coarse meal. Add buttermilk and stir just until moistened.

Drop the topping by large spoonfuls onto the peaches (hot ones if you used fresh peaches). Sprinkle top with the sugar/nutmeg/cinnamon mixture.

Bake uncovered for about 30 minutes or until topping is browned.

Serve warm with ice cream or whipped cream.
