Basic Biscuit Mix

This mix can be used in any recipe that calls for Bisquick®; just use the same amount of mix as the amount of Bisquick® called for.

Ingredients:

8-1/2 Cups All-Purpose Flour
1/4 Cup (4 Tablespoons) Baking Powder
1 Tablespoon Salt
2 Teaspoons Cream of Tartar
1 Teaspoon Baking Soda
1-1/2 Cups Instant Dry Milk or Dry Buttermilk Powder
2-1/4 Cups Vegetable Shortening

Note: I find it easier to use my stand mixer and make 1/2 of the recipe at a time

In a large bowl, sift together all dry ingredients. Blend well. With a pastry blender or a stand mixer, cut in shortening until mixture resembles coarse cornmeal. Place in an airtight container. Store in a cool dry place. Use within 10 to 12 weeks (I store mine in the refrigerator-it keeps longer and stays fresher that way). Makes about 13 cups of mix.
