Ingredients:
1 cup unsalted butter
1 cup granulated sugar
1 large egg
1 tsp baking powder
1 tsp vanilla extract
3 cups all purpose flour
Preheat to 350°. In large bowl cream the butter and sugar for 2 minutes. Stop and scrape bowl. Cream for another 60 seconds. Beat in the egg and vanilla until well combined.
Sift together baking powder and flour. Add this mixture 1 cup at a time to the butter mixture. Mix well. Blend last cup by hand. Dough will be stiff. It does not need to be refrigerated like most cut-out cookie recipes (which is what I like about it).
Divide into 2 balls. Wrap one with plastic wrap until ready to use. On floured surface roll out to 1/8 inch thickness. Cut out cookies and carefully place on parchment lined cookie sheets. Bake for 6-8 minutes. Let cookies rest on cookie sheet until ready to frost. (let them cool completely)
Makes about 3 to 3-1/2 dozen cookies depending upon size of cutters.
